Description
A fast and flexible paleo chicken and broccoli stir fry packed with flavor and ready in under 30 minutes.
Ingredients

For the Chicken:
- 2 Tbsp avocado oil or olive oil
- 1 1/2 lbs boneless skinless chicken thighs or breasts, sliced thin
- 2 tsp arrowroot or tapioca flour
- Sea salt and black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp coconut aminos
For the Sauce:
- 6 Tbsp coconut aminos
- 1 tsp sesame oil
- 5 Tbsp chicken bone broth or stock
- 2 tsp arrowroot or tapioca flour
Remaining:
- 1 large head broccoli, cut and blanched
- 4 scallions, sliced (white and green parts separated)
- 4 cloves garlic, minced
- 1 inch fresh ginger, peeled and minced
Instructions
- Blanch broccoli in microwave: 2 minutes, stir, then another minute.
- Toss sliced chicken with arrowroot, spices, and 1 tbsp coconut aminos.
- Whisk all sauce ingredients in a bowl until dissolved.
- Heat oil in skillet and sear chicken until golden and cooked through. Set aside.
- Sauté garlic, ginger, and white scallion parts in same pan.
- Add broccoli, chicken, and sauce. Stir quickly until coated and thickened.
- Serve hot over cauliflower rice. Garnish with green scallions.
Notes
- Make sure not to overcook once the sauce goes in—arrowroot thickens quickly.
- Leftovers are great with a fried egg on top the next day.
