Description
Crispy on the outside, juicy inside, these paleo chicken nuggets coconut are gluten-free, kid-friendly, and perfect for weeknights or freezer prep.
Ingredients
- 2 lbs ground chicken
- 1 cup almond flour
- 1 tablespoon Cajun seasoning or mix of garlic, onion powder, paprika, salt, pepper
- 1 large egg
- ½ cup almond flour (for coating)
- 1 cup unsweetened shredded coconut
- Salt and pepper to taste
- Avocado or coconut oil for frying
Instructions
1. In a shallow bowl, mix almond flour, shredded coconut, salt, and pepper for coating.
2. In another bowl, combine ground chicken, almond flour, Cajun seasoning, and egg.
3. Scoop 2 tablespoons of mixture, shape into nuggets, press into coating gently.
4. Heat oil in skillet over medium heat until shimmering.
5. Fry nuggets in batches, 5–6 minutes per side until golden and cooked through.
6. Rest briefly on paper towels. Serve hot with your favorite paleo dipping sauce.
Notes
You can freeze these nuggets before or after cooking. Reheat in oven or air fryer for best results.
