Description
These Paleo Pizza Roll Ups are crispy, grain-free, and packed with savory beef, spinach, and tomato sauce. A perfect family-friendly weeknight meal.
Ingredients
- ¾ lb ground beef
- ¾ tsp salt
- ¼ tsp black pepper
- 1 cup paleo-friendly tomato sauce
- 1 cup fresh spinach
- 8 grain-free tortillas (like Siete almond flour tortillas)
- ½ cup dairy-free cheese (optional)
- 1 tbsp chopped fresh parsley (for topping)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Heat a skillet over medium heat. Cook ground beef until browned, breaking it up. Season with salt and pepper.
3. Stir in tomato sauce and spinach. Cook until sauce bubbles and spinach wilts. Remove from heat.
4. Warm each tortilla for 10–15 seconds until flexible.
5. Spoon 2 generous spoonfuls of filling onto each tortilla. Add dairy-free cheese if using.
6. Roll tightly and place seam-side down on baking sheet.
7. Bake for 20 minutes or until crisp and golden at the edges.
8. Sprinkle with fresh parsley and serve with extra tomato sauce for dipping.
Notes
Warm tortillas before rolling to avoid cracking.
Store leftovers in an airtight container in the fridge for up to 4 days.
For meal prep, freeze before baking and cook directly from thawed.
