Paleo Sweet Potato and Ground Beef Bowl for Easy, Flavorful Dinners

Description

A hearty, flavorful paleo bowl made with roasted sweet potatoes, seasoned ground beef, and a creamy cilantro-lime drizzle. Quick to make and perfect for meal prep.


Ingredients

  • 1 lb. ground beef
  • 1 onion, diced
  • 1 bell pepper, diced (orange if possible)
  • 1 garlic clove, minced
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1 tsp. chili powder
  • 1 tsp. dried oregano
  • Cooking fat (avocado oil or similar)
  • 2 green onions, sliced
  • Sea salt and freshly ground black pepper to taste
  • 2 sweet potatoes, peeled and diced
  • 2 tbsp. olive oil
  • Juice of half a lime
  • 2 tsp. chili powder
  • ½ tsp. cumin
  • ¼ cup cilantro, chopped
  • ¼ cup coconut milk
  • Juice of 1 lime
  • 1 tsp. chili powder

Instructions

1. Preheat oven to 425°F.

2. Toss sweet potatoes with olive oil, lime juice, chili powder, and cumin. Season with salt and pepper.

3. Spread them on a baking sheet and roast for 15 to 20 minutes until golden and tender.

4. While roasting, heat a skillet over medium with cooking fat.

5. Sauté onion and garlic until soft, about 2 minutes.

6. Add ground beef, break it up with a spatula, and cook until browned, around 6 minutes.

7. Stir in bell pepper and cook 3–4 minutes.

8. Add paprika, chili powder, cumin, oregano, salt, and pepper. Stir to coat well.

9. In a small bowl, mix coconut milk, lime juice, cilantro, and chili powder to make the drizzle.

10. To serve, add sweet potatoes to a bowl, top with beef mixture, and drizzle with sauce. Garnish with green onions.

Notes

You can swap the ground beef for turkey or bison.

Roasted cauliflower works great if you want to cut carbs.

The drizzle keeps well in the fridge for 2 to 3 days.
